You can disable bands in the SSID settings. Instead of shutting down an available radio, I would clone your SSID and flag it in the name with a "no5ghz" or something and then push that SSID via override, and remove the one that would have the 5Ghz from its VAPs. You may need to crate a new AP Group for this.

Subject: Aruba Mesh P2P How configure one radio band for mesh link and another one for clients
Hello!
I created (copie) a new Virtual AP profile with allowed band g in RF section and applied it to the APs with the PER AP Override method. However APs continued to used 5Ghz for SSID. So I created an other RF Management profile, with 2.4 Radio ON and 5Ghz Radio OFF. I added it to the override profile and it works! Now my laptop have network without interruption.
Thank you for your help!

Those doubles are the originals still applied next to the copies. The copies shouldn't go into your main AP group at all, only onto the two mesh APs, and those two have to drop the originals.
You don't need a new group for that. The AOS 8 ap-name reference says virtual APs can be added or excluded per AP name: https://arubanetworking.hpe.com/techdocs/CLI-Bank/Content/aos8/ap-name.htm. On the portal and the point, exclude-virtual-ap each original and add virtual-ap for each 2.4 GHz copy. Build the copies with clone so they keep pointing at your existing SSID and AAA profiles, then set allowed-band g. The Per-AP Override page covers the same steps in the Conductor WebUI (8.8 and later): https://arubanetworking.hpe.com/techdocs/ArubaOS/AOS_8x_WebHelp/Content/arubaos-solutions/access-points/per-ap-overrd.htm
With the VLAN ruled out, my money's on clients and the backhaul sharing 5 GHz airtime, and this takes clients off the mesh radio.

Hello! We have ArubaOS 8.10 with a mobility conductor. The SSID is not on the same VLAN than the laptop. I tried to create new Virtual AP profile for each of my SSID (and leave only 802.11g) but it systematically create double of all my SSID. So I stopped there and think may be there's a simple way to do it.

You can do this. The AOS 8 mesh docs say a dual radio mesh node can serve clients on one radio and carry mesh plus WLAN on the other. Keep the backhaul on 5 GHz and put the SSID on 2.4 GHz for the mesh pair only.
On an AOS 8 controller, move the portal and point into their own AP group. Give that group a copy of your virtual AP with allowed-band set to g, so it only comes up on 2.4 GHz. The wlan virtual-ap reference covers that option: https://arubanetworking.hpe.com/techdocs/CLI-Bank/Content/aos8/wlan-virtual-ap.htm. Instant has no AP groups, so you'd use SSID zones instead: a 2.4 GHz only profile zoned to the two mesh APs and your normal SSID zoned to the rest. The Instant zone settings page has the steps: https://arubanetworking.hpe.com/techdocs/Instant_8.x_WebHelp/Content/instant-ug/custom-iap-param/conf-zone-sett.htm
Which platform are you on? Also, is the SSID on the same VLAN as the laptop's bridged port? One quiet SSID breaking the link points there before it points at airtime.
